Learning the craft where baumkuchen began
In 2009, owner Katsumi Fukasaku and his wife Ayumi studied baumkuchen-making in Kobe, where baumkuchen was first introduced to Japan. After which, they opened Japan´s first farmers baumkuchen specialty shop on February 4th, 2010. They insisted on an open-style kitchen so that people could enjoy seeing the ovens where baumkuchen is carefully baked, layer by layer, growing gradually larger - and how it is sliced after it´s baked. The customers not only enjoy watching the process, but they gain an appreciation and an understanding of the safety and security of the food. In 2011 they visited the Kreutzkamm store in Dresden, the birthplace of German baumkuchen. They continually keep a global view in exploring new flavors in order to avoid restricting themselves to just Japanese baumkuchen.
Global awareness of the safety of Japan food products
After the Great Tohoku Earthquake Disaster of March 11, 2011, and associated Fukushima nuclear power plant incident, it has become extremely difficult to export overseas, particularly to the EU. Testing has been performed on the baumkuchen, eggs and other ingredients, checking for levels of radioactive iodine, cesium 134, and cesium 137. This was followed by an issuance of a testing certificate certifying that these elements were not detected. "We believe that there is a great message attached to the fact that these awards were received even under the global concern over radioactive substances in Japan." said Katsumi Fukasaku. "Not only has it given us great confidence, but is also a message to the world about both the safety and delectability of Japanese products."
